A popular kosher website, Joy of Kosher, with Jamie Geller, has a recipe for sesame noodles.
Here’s the ingredients list provided on the website:
16 oz pasta (linguine, whole wheat preferred)
6 tablespoons sugar
6 tablespoons canola oil
6 tablespoons rice vinegar
6 tablespoons soy sauce
2 tablespoons sesame oil
6 scallions sliced
1 tsp toasted sesame seeds
And here are the cooking instructions:
Cook pasta according to directions.
Mix the liquid ingredients together and microwave for 1 min (until sugar dissolves) then pour over pasta.
Then add scallions (if using) and seeds when the pasta is cooled.
Try this Healthier Version of Kosher Sesame Noodles
Although this recipe on JoyOfKosher.com is no doubt quite delicious, let’s make it even healthier.
The first obvious step is to replace the whole wheat noodles with Miracle Noodles. Even though whole wheat is considered by many to be far superior in health than regular white flour noodles, whole wheat noodles still have lots of calories, raises blood sugar and insulin levels and contains gluten.
So ditch the whole wheat and instead use Miracle Noodles. We think Angel Hair is best for Sesame Noodles.
Instead of using regular table sugar, opt for something lower on the glycemic index such as agave, or better yet, raw stevia. You can compromise and do half sugar and half stevia to get used to the different taste.
Canola oil is often processed and can spoil easier than other, healthier oils. Try using instead raw unsalted peanut butter for a more authentic Asian touch. Ditch the wheat in the soy sauce and instead use Bragg’s Liquid Aminos. And not all sesame oils are the same. The professional cooking staff at Miracle Noodle recommends dark sesame oil for even richer flavor.
White cabbage and bean sprouts can also be added. Both are pareve, healthy ingredients you can add to vary the palette of flavors.
