The boss needed you to stay late at work. You’re back home. Exhausted. Your 2 kids need sustenance; they are getting irritable. Though you’d rather just go to sleep, you’ve got to “Mom Up” and whip something up healthy and fast.
Here’s one of the healthiest meals you can make in about 10 minutes:
Get a couple thawed wild salmon fillets. Preheat oven to 425.
Brush salmon with olive oil and garlic. Add a few sprinkles of healthy salt. Dress with crushed almonds.
In separate frying pan, on low-medium heat, coat pan with coconut oil. Add broccoli and asparagus. Sprinkle with herbs and spices of your choosing.
Place salmon in oven. Cook for 8 minutes.
Broccoli and asparagus should also be ready within 8 minutes.
While both salmon and veggies are cooking, prepare Miracle Noodles. With this dish, the garlic-herb fettuccini would taste great with the salmon and veggies. And if you’re not sure if you’re cooking Miracle Noodles the best way, watch this short video. Make sure you dry-roast the Miracle Noodles so that when you add a low-sugar sauce to the noodles, they’ll really soak up the flavor! Again, watch this video if you’re not sure how to dry roast Miracle Noodles. The video is less than 3 minutes long, or about the time it takes to prepare Miracle Noodles.
You can either serve the salmon and veggies and Miracle Noodle separately, or, with a spatula, you can break up the salmon fillets in small pieces and blend with the veggies and Miracle Noodles to make a stir-fry.
Our good friends at Julian Bakery have a recipe on their website featuring Miracle Noodle and salmon, which is very very healthy due to its high content of Omega 3 fatty acids.
